The Chenin grapes are sourced from two distinct terroirs : one from the south and one from the north.

Wine making process

Vinified at Domaine Sérol. Direct pressed method. Vinification primarily in concrete tanks, foudre, and 500-liter barrels.

Alcoholic fermentation with indigenous yeasts. Ageing on fine lees for 6 months. Light filtration, bottled by the Domaine's team.

Alcohol content 12%/ ABV.

Bottling

Lightweight glass bottle (395g). Sealed with natural cork.

Available in 75cl / 150cl

Service

To be served at 14°C. Can be cellared for 2 to 3 years.

Vinification at the Domaine Sérol. Direct press method. Cold settling of the juice.

Alcoholic fermentation with indigenous yeasts. Malolactic fermentation. Aged 3 months in cement tank.

Light filtration, bottled by the Domaine's team.

Alcohol content 11.5%/ ABV.

Bottling

Lightweight glass bottle (395). Screw-cap closure.

Available in 75cl

To be served at 11°C. Can be cellared for up to 2 years.

Bottled without any additional dosage liqueur. Fermentation continues in the bottle, still with indigenous yeasts.

The wines are then stabilized using the transfer method.
